National dish of Zambia

The national dish most associated with Zambia is nshima — a thick maize-based staple similar to sadza in Zimbabwe or ugali in East Africa. It is eaten with the hands and paired with relishes called ndiwo, such as meat, fish, beans, or vegetables.

Popular traditional foods in Zambia include:

  • Ifisashi — vegetables cooked in a rich peanut sauce
  • Kapenta — tiny dried freshwater fish, especially around Lake Tanganyika and Lake Kariba
  • Chikanda — sometimes called “African polony,” made from wild orchid tubers and peanuts
  • Village chicken stew — often served during celebrations
  • Vitumbuwa — fried dough snacks similar to puff-puff or mandazi

Zambian cuisine is hearty and communal, with maize at the center of daily life and meals often shared from a single plate.
