National Dish of Ethiopia

The most iconic dish associated with Ethiopia is injera — a large sourdough flatbread that forms the foundation of Ethiopian cuisine. More than just bread, injera is both a plate and an eating utensil, used to scoop up a variety of richly spiced stews, vegetables, and meats.

Made primarily from teff, an ancient grain native to Ethiopia, injera has a soft, spongy texture and a slightly tangy taste created through fermentation. It is typically spread across a large communal tray, with different dishes placed directly on top.

One of the most famous accompaniments is doro wat, a deeply spiced chicken stew often considered Ethiopia’s national stew. It is traditionally prepared with slow-cooked onions, berbere spice mix, garlic, butter, and boiled eggs.

Ethiopian cuisine is known for its bold flavors and distinctive spice blends. The famous berbere mixture combines chili peppers with spices such as fenugreek, ginger, coriander, and cloves, creating the warm and aromatic flavors found in many dishes.

Food in Ethiopia is also deeply social. Meals are often shared communally, with everyone eating from the same tray of injera. In Ethiopian culture, feeding someone by hand — known as gursha — is considered a gesture of friendship, respect, and hospitality.

The country’s cuisine is also shaped by religious traditions. Large parts of the population follow the Ethiopian Orthodox Tewahedo Church, which includes numerous fasting periods throughout the year. As a result, Ethiopia has developed an exceptionally rich vegetarian cuisine featuring lentils, chickpeas, cabbage, potatoes, and spicy vegetable stews.

Beyond the food itself, Ethiopian coffee culture is world-famous. Ethiopia is widely regarded as the birthplace of coffee, and traditional coffee ceremonies remain an important part of daily life and hospitality across the country.

Ethiopian cuisine stands apart from many other food traditions in Africa and the Middle East. Its unique ingredients, communal dining style, and powerful flavors make it one of the world’s most distinctive culinary cultures.
